A friend of mine brought over zucchini from her garden and I decided to make zucchini bread and put it in the freezer for special occasions and when we have guests. The problem is that I froze all of them except one loaf. I indulged in two yummy pieces today. It tasted SO good! I had substituted applesauce for some of the oil in order to make it a little healthier. Well, I should of made it the same way because it was still loaded with points. I plugged in my recipe into the weight watcher website and one piece is 9 points!!! AAAHHH. No dinner for me! Today I feel depressed..like I totally cheated. Sucks, because the rest of the day I did just fine but then I went and ate 3/4 of my daily points in two little pieces of zucchini bread. Doesn't seem possible. I am going to have to hit the treadmill tonight and try to burn off at least one piece. However, it is a catch 22 because the more depressed/upset you are the less likely you are to want to work out. I have no motivation now!
I will overcome it! But DAMN IT...I am mad at myself. I must say though...I would challenge anyone to a zucchini bread cook off (even my sister in law Kimberly who is the world's best baker) because I am pretty sure that my recipe will kick anyone's butt!
Oh Yay!! I just remembered last night that this recipe makes 2 loaves! That means that those slices were only 5 points a piece. I thought that seemed really really high! That makes me feel a little bit better.
ReplyDeleteOkay, so you need to post your zucchini bread recipe for us to see what awesome things are in it that make it so good!! I'm always fascinated with recipes...love to see the variations of ingredients and portions.
ReplyDeleteI always get depressed as well, when you read calories on things and then realize that you just blew your day by eating that extra piece of bread, or enjoying a candy bar, or not looking at the label when you pull out a bag of chips and the 1/2 bag later when you look at the calories you consumed you GASP!
If the photo you posted is of the bread you made it looks absolutely delicious! (OH and BTW...I wouldn't go so far to call me the world's best baker. I still have a LONG ways to go, but I am improving each year). Wish we lived closer so we could have a zucchini bread bake off to see which recipe "kicks butt" (BIG WINK!)
RECIPE
ReplyDelete2 C Shredded zucchini with skin
3 eggs
2C sugar (white)
1 C vegetable oil
2C flour
1/4 tsp baking powder
2 tsp soda
1 tsp salt
3 tsp cinnamon
3 tsp vanilla
1 C chopped walnuts (you could sub pecans)
Add to well-greased & floured pan (I use that spray with the flour in it). Cook at 350. This makes 2 loaves. I am not sure how long to cook it. Seems like about 45 min. You will be able to tell.
For shredding the zucchini I have a blade that I use in my food processor but you could use a cheese grater if not.
